UNCONVENTIONALLY APPLIED TO TEMPRANILLO, THEY PUT THESE PICKS THROUGH CARBONIC MACERATION FOR 10 DAYS. THEY TAKE THE EXTRA TIME AND COST TO HAND-HARVEST THIS VINEYARD BECAUSE OF THE IMPACT ON QUALITY. ADDITIONALLY, CARBONIC MACERATION REQUIRES UNBROKEN BERRIES AND FRUIT ON STEM. THEIR SIGN TO CRUSH IS WHEN A SIGNIFICANT VOLUME OF BERRIES START BURSTING FROM INTERNAL GAS BUILD UP! THEY LIGHTLY FOOT CRUSHED IMMEDIATELY STARTED PRESSING, RESULTING IN AS SOFT A BODY AS YOU CAN GET OUT OF TEMPRANILLO.
