These wente Clone Chardonnay grapes were organically dry-farmed and harvested from Gimelli Vineyard in the Cienega AVA and Zabala Vineyards in the Arroyo Seco AVA. Harvested at 21.5 Brix and 2.2 g/L Malic acid these grapes were destemmed and natively fermented on skins for 10-14 days before being pressed into flex tank eggs where they finished primary and malolactic fermentation natively. Subsequently, they were racked into neutral oak barrels for four months before being bottled at 15 ppm free SO2
