This beautifully precise Chablis captures everything we love about Chardonnay grown on Kimmeridgian limestone - purity, tension, and a touch of the sea. Fermented and aged entirely in stainless steel, it’s a wine that lets its terroir shine through, offering a fresh, mineral-driven expression.

 

In the glass, it shimmers pale gold with green highlights. The nose is clean and coastal, with notes of chalk, sea spray, and a hint of citrus zest. The palate is lively and focused - a mix of lemon, white peach, and savory minerals - finishing with the classic Chablis signature of iodine and oyster shell. Aged 10 months on fine lees, it carries both youthful energy and subtle depth.

 

Perfect on its own. Also with oysters, crab, or lobster, this wine’s crisp, saline edge makes it a natural match for anything fresh from the sea.

From the importer: Vines planted in 1980, located in a micro valley of Beines. It is a historic plot with clay-limestone-white marls soils and vine rootstocks usually found in Grand Crus. Textbook example of great Chablis, but at the same time highlights the terroir and unique stamp of the producer.

 

Guillaume Michaut has been surrounded by the vineyards and history of Chablis since childhood. His grandfather was an early believer in the wines of Chablis, and worked proudly to expand the Chablis appellation to his village of Beines and beyond in the 1960s. Guillaume realized that his vision was starkly different from that of his uncles, and decided to take his small share of the family vines and set out on his own in 2018. Guillaume had developed an interest in organic farming and low-intervention winemaking. Equally as important, he adopted a winemaking philosophy that respected the terroir and the vineyard over the process and the winemaker. Setting out on his own was an opportunity to put this belief into action. This began with promoting the place, rather than himself with the naming of his domaine 47 N 3 E, which refers to the longitude and latitude of his hometown Beines.
