The name of the wine translates to the “Madness of the green walnut”. It is made from 100% Cabernet Franc, organically grown, on sedimentary soil on the banks of Vienne (gravel, sandy-clay, limestone). The vines are on average 45-65 years old and come from a small 0.5 ha plot. The grapes are hand harvested in small crates, brought back to the winery and gravity fed into stainless steel fermenting tanks. Alcoholic fermentation lasts about 3 weeks followed malolactic fermentation and ageing for 12 months in barriques. He uses just a small amount of sulfur at bottling.
Frédéric Sigonneau has been making wine in Touraine’s Loire Valley since 2007 upon reviving his family’s 8 hectare estate in Cravant les Coteaux. He manages his vineyards in the most natural way possible and minimally intervenes throughout the winemaking process. He crafts certified organic wines. He started off working with Cabernet Franc from old vines (about 60 years old) growing on gravel on the right bank of the Vienne river in the heart of the Chinon appellation.
Intense red hue, powerful nose with aromas of ripe red fruits and subtle toast. The palate is round, fruit driven, dry and held together by a nice vein of acidity and supple tannins. Great length in the mouth. Enjoy with game, red meats, cheese plates
