375 CASES PRODUCED. CARBONIC MACERATION, ALL-NATIVE, ONE ELM + DUTTON VINEYARDS, TEXAS HIGH PLAINS, 2021 - WET CONCRETE, RASPBERRY, STRAWBERRY, ORANGE PEEL, MOSSY FOREST, FUZZY FEELINGS, UMAMI TSUNAMI.
OUR TEMP NUEVO HAS BECOME ONE OF OUR CORE WINES WE'RE KNOWN FOR. HIGHLY SEASONAL, WE CAN NEVER SEEM TO MAKE ENOUGH OF IT.
UNCONVENTIONALLY APPLIED TO TEMPRANILLO, WE PUT THESE PICKS THROUGH CARBONIC MACERATION FOR 10 DAYS. WE TAKE THE EXTRA TIME AND COST TO HAND-HARVEST THIS VINEYARD BECAUSE OF THE IMPACT ON QUALITY. ADDITIONALLY, CARBONIC MACERATION REQUIRES UNBROKEN BERRIES AND FRUIT ON STEM. OUR SIGN TO CRUSH IS WHEN A SIGNIFICANT VOLUME OF BERRIES START BURSTING FROM INTERNAL GAS BUILD UP! WE LIGHTLY FOOT CRUSHED IMMEDIATELY STARTED PRESSING, RESULTING IN AS SOFT A BODY AS YOU CAN GET OUT OF TEMPRANILLO.
THE RESULTANT WINE IS BOTH UNCONVENTIONAL IN PROFILE BUT CONSISTENT. EVERY VINTAGE OF TEMPRANILLO NUEVO TAKES ON DEEP UMAMI NOTES BEHIND HEAVY ORANGE PEEL AND MULLED REDBERRY FLAVORS. THIS VINTAGE DELIVERS STRONGER DANK FLAVORS, AKIN TO PETRICHOR AND DAMP FOREST FLOOR.
