Light, fresh, easy-to-drink chillable red with fruity notes such as strawberries and cherries. 
Clay-calcareous soils, gentle pressing of the grapes, fermented in stainless steel tanks. On the lees for about 16 weeks.

 

Also working at Mas Candí, Toni Carbo launched his own project, La Salada, in 2012 (the inaugural year of his wines). A fourth-generation winemaker, Toni inherited his family's vineyards ten years prior and started cultivating them organically. During this period (2009-2012), he fell in love with natural wines, drawn to their inherent liveliness and dynamism.

 

Toni's ancestors hail from the quaint Parellada village, a mere 40 kilometers outside of Barcelona. Their family homestead, La Salada, was where his great-grandfather toiled fervently on the land. The tradition continued with Toni's grandfather, also named Toni Carbo, who grew up on the same property. After years of hard work and saving, he was able to purchase land of his own - but not just any land. His keen eye sought out the secluded, riverside parcels with stunning pure limestone terrain that others overlooked. Nowadays, these coveted plots are hot commodities for grape growers, but back in the 20th century, it was a hidden gem.

 

Toni inherited his love for La Salada from his grandfather and great-grandfather. He nurtures the property's 69 acres of vineyards without chemicals and some of the vines have been around for over 80 years (with 54 acres belonging to him, and the remaining 15 acres shared with family and friends, who all pitch in). His partner Anna joined the fun and now, the couple is fostering the fifth generation of Carbos to carry on the family legacy.

 

Along with being an organic farmer, Toni also plants grains between rows to keep nitrogen levels in the soils balanced. His vineyards are devoted to native Penedès grapes like Macabeu, Xarel-lo, Sumoll, Malvasia de Sitges, and others. Many natural (radical) winemakers from France have even been known to visit his vineyards to purchase grapes, impressed by Toni's responsible farming practices and shared philosophy.

 

In the depths of his cellar, Toni maintains his family's customs with pride. He lovingly restored his grandfather's wine-making haven, where the fruit is nourished, fermented, and matured.
