Salvatore owns and operates a small farm in the Pachino region in the southeast corner of Sicily. There he grows a variety of crops including cereals for pasta flour, olives, fruits and of course grapes. Turi combines his great love for the vineyard and ancient traditions with study and dedication to respect the earth and its natural equilibrium. The farm is informed by 5 generations linked to viticulture and wine production in Pachino.
Salvatore adheres to the notion that wine is made in the vineyard that was passed on to him from his grandparents. His vineyards are in the Contrada Buonivini near the “Vindicari” natural preserve. He farms organically but also follows the lunar calendar to determine the best time to carry out this or that task in the vineyard and cellar. He does all the heavy work with the use of a hoe and pruning shears.
The palate is red fruit, black currant, spice and black cherry followed by nice tannins and great acidity. Medium-bodied with good amount of minerality. Easy drinking red, perfect for your red meat plate or red sauce pastas!
