This sparkling wine from world famous Emilia-Romagna comes from extremely old vines (80-100 years old) that grow right next to the Adriatic Sea. The area is salty, sandy, windy, but also receives a great balance of fog and sun - the end result is a stunning pet-nat with nice bubbles, bone dry, lots of sea salt and cool yellow fruits. Pairs really well with seafood.

 

This wine is not disgorged, so you’ll notice natural sediment in the bottle. You can pour gently for a clearer glass, or swirl to mix for more texture and flavor. Chill well, open slowly (preferably over a sink), and expect a little wild energy in the glass.
